Queso de oveja añejo, elaborado con leche cruda; de paladar acentuado e intenso, con retrogusto equilibrado y persistente, aroma y olor afrutado, textura dura, escasa humedad y baja elasticidad con color marfil oscuro más marcado en su perímetro por el largo tiempo de maduración y ojos pequeños e irregulares. Su curación especial de 15 meses, permite obtener un sabor excepcional.
Se presenta en quesos de 3 kg, , disponemos de cuñas de 350 gr (1/8 de queso), con el exterior recubierto en aceite plastificada.
