Queso de textura firme y cremosa. Sabor salado bajo, ácido medio, amargo bajo y picante bajo. Olor de intensidad media – alta Corteza pimentada ligeramente rugosa. Pasta de color blanco a marfil y estructura uniforme compacta y sin grietas
Maduración mínima de 40 días.
